Field Trip
So my Art 160 class, at least the die-hard ones, came out to my 'field trip/potluck' that I had last night.
I made several dishes, wrapped-em up like tin-foil burritos, and cooked them on the coals.
It rained VERY hard for about 30 minutes, which is why most of them didn't show up. For those who did, we had a nice time, ate some good food, (salmon, veggies, BBQ beef/mushrooms, etc...), then the light broke and we went out driving on the sand dunes.
Got a couple of good images. Darren got some good ones of the campfire with people...I only shot the campfire with burned marshmallows.

Since only the 'die-hards' showed up for your bar-b-que, there are probably LOTS of leftovers...right?
Nope, no food is left. Here's what we made though:
Salmon:
2 lbs salmon fillet
1 lemon
1 lime
1 whole clove garlic
Place Salmon in tin-foil pan. Sprinkle with olive oil, salt and pepper. Cover with lemon and lime slides. Cook until not-quite-done. Remove from fire coals. Enjoy!
BBQ Beef'n'mushrooms'n'garlic:
1 pound ground Angus
1 whole garlic clove
Famous Dave's BBQ sauce
2 Green Zuchinnis
2 Yellow squash
A bunch of Italian Mushrooms
Mix ground beef, diced garlic cloves and mushrooms with enough sauce that you think will taste good. Place in tin-foil pan. Smother with zuchinni and squash, a little S & P. Cook until you can smell it. Enjoy!
And an encore recipie for Pork Loin in a Dutch Oven:
1 pork loin (not the huge gigantic one, just a medium-ish size one)
Potatoes
Onion
Green and Red Pepper
Carrot
Garlic (are you seeing a theme with my cooking?)
Olive Oil
Green Apple
Dice vegetables, smother with olive oil, S&P and line bottom of Dutch Oven with veggies. Fillet pork loin if it's a thick one, or if your oven isn't deep enough to get it in there unsliced. Place pork loin on top of veggies and apple slices on top of pork loin, cover and bake in coals. When you can smell it, it's done. You can open the lid of the oven and turn the pork over to braze the other side of the meat. Keep coals on lid to make sure pork is cooked properly. Be careful that you don't overcook the pork. Nothing worse IMO.
